Default Beverages purchased airside banned from carry-on?

And also isn't there a rule by the airlines (not TSA) that
all liquor consumed in the cabin must have been supplied by the carrier?

Not supplied, served. The reason is so they can stop serving you if
you're visibly drunk.

Different airlines interpret it in different ways. If you hand a
bottle to an FA and ask if she'll open it, sometimes she will,
sometimes not.
