US airlines and childrens ticket?

Many US airlines don't seem to have fares for children 2-11 years old. What is
the policy here or am I missing something. Most sites do not have a dialog where
you can select number of children.

They don't for the cheaper fares (where the child occupies a seat).
Just for full fares..

They do have child fares for international flights

Well, I know they exist on Air Canada but are restricted as to fare
class and are more common on International flights. (i.e. child
discount on a highly discounted fare class is usually not available).
