Default Passenger profiles

Hi,
Can anyone point me to a site which explains what airline "passanger
profiles" are, and how they are used by the airlines, particularly
with regard to the in-flight services available? Also why are
different fares available for the same class of travel? I'm stuck on
some coursework. Thanks in advance.
