You could mail excess wait back from Italy; the postal system is a lot
more reliable than it used to be.

I'm not sure what risks you're referring to in flying Ryanair. I've
only done it once so far (Bergamo to Luton), but had no problems and
haven't heard of any.

I am sure that my chekin bag will be over their limit. You add a
minimum of 90 euros on top of what I am paying, and the apparent risk
of flying with ryanair. Admittedly, the perceived risk of travel with
ryanair is not from my experience, but experiences others have shared.

Cancelled flights, no customer service etc. Vacation time has some
value to me. A few hours of waiting is one thing, but having to find
alternate travel from Rome to Italy would be difficult for me

Oh, I suspect it wouldn't be all that difficult.

Seems to me it wouldn't be necessary to fly from Rome to Italy. I am
very certain that all you need to do in Rome is close your eyes turn
around 3 times while repeating the word Italy as fast and as many
times as you can. After the third turn open your eyes and say
abracadabra, alla kazaam. Then you will be in Italy. ;-)
