Default things to do for long stay HK

for the visitor who plans to stay long term in HK what are good ways
to spend time

not the one time fun flash and go tourist sites.

things that make a city go are the good cafe scenes, good museums

the star ferry was good when it was still up and you go do it over and
over again

That's wrong. HK is a very expensive place and it's impossible to find a
clean room with TV and shower for 20 HKD (= 2 Euro). The cheapest room I
was able to find in 2004 cost 250 HKD and it was not much of a room.

In China instead hotel rooms are much cheaper and for the equivalent of
200-300 HKD you'll get a luxurious room. In Dali I only paid the
equivalent of 90 HKD for a good room. Foreigners are free to choose
whichever hotel they want.
