Default Seeking input re cross-country road trip

We'll be taking a road trip from Virginia to Southern California, and seek
anyone's input re good local (but cheap) eats in the following areas where
we plan to stop overnight: along I-40

Knoxville, TN
Forrest City, AR
Oklahoma City, OK
Santa Rosa, NM
Flagstaff, AZ
South Rim Grand Canyon, AZ
San Diego, CA
As far as places to stay along the way in these places, we tend to go for
the chain motels (Holiday Inn Xpress, La Quinta, Hampton Inn, etc.) and like
to find those that are new, if possible. Anyone know of new-builds of such
motels along the way?

Since we plan to spend some time in San Diego, any input re decent
inexpensive places to stay, best things to see, etc. would be appreciated.
Also, any reasonable rental opportunities at decent time-share operations in
San Diego or the LA San Fernando Valley might work.
Thanx in advance.

Cheap is easy in those places but good isn't. You really do need the
advice of locals.

You should check the list of NewsGroups with "food" or "eat" in the
name (ours is ba.food) to ask them.

I urge you to avoid any franchise. Although some aren't bad, they
don't give you, if you'll forgive the pun, local flavor.
