Default VISA to HK

I'm going to HK from Europe, and I plan to see other parts of China at the
same time.
Do I need a VISA with multiple entrances to go to HK and China?

You can get a visa from HKG, it take from couple hours to couple days
depending how much you want to pay. I'm afraid your limited to two
unlimited visits, unless it for business then you can apply for more.
Prices start at HK$350 for a two visit taking 23 days to process.

Assuming you don't need a visa for HK, you only need to get a visa for
China. If you get a China visa at your local consulate or embassy,
your visa won't get used until you go into China proper. Whether it's
multiple entry or not depends on how many times you want to cross the
HK-China frontier. The price goes up as the duration and number of
entries goes up.
