I don't know any general website about the topic.

http://www.luxurytrains.co.za/ and
http://africanadrenalin.co.za/BlueTrain/index.htm are about the Blue train
in South Africa...

John,
Go to google.com and type in African railways and there are plenty of
links certainly for East and South African railways. I didn`t check all
links so I can`t tell you about West and North Africa,
I`ve been on the train from Nairobi to Mombasa and back several
times. It`s quite an experience!
