Is it easy to change Euro in local foreign exchange offices or banks in

It's no problem in either country. Banks and Bureaux de Changes
usually offer best rates, and many hotels will change for you too. Botswana currency is Pula Zambia currency is Kwacha Don't be tempted by the street touts who offer better rates. You will probably lose half you money. No problem for Botswana.
