Default Traveling to Hanoi

Hi,

I am planning to go next month to Hanoi.

I planned 1-2 days in Hanoi, then going for two days to the West
North, would like to see minorities villages, but avoid tourists
crowds like in big markets.

Then 2-3 days in the West North on the back or Islands like Cat Ba.

I am flying in from Hong Kong where I live.

Should I arrange everything before I come or can I stay in hotel and
arrange separated tours from there?

Any nice and comfortable hotel is recommended?
