There is not a lot of canoe tripping between those two points. The
most
popular spot for canoe tripping is Algonquin Park, about 3 hours
north of Toronto (and you there are several supermarkets right beside
the Hwy. 400 in Barrie. You can rent camping equipment at the
Portage store in the park or at any of several outfitters just
outside the park. Bear in mind that September weather can get pretty
chilly..

Have you ever been outside Toronto ?? This country is covered with
rivers and other waterways...how do you think the natives travelled
around so much. There's PLENTY of canoeing opportunities all along the
way...you don't have to travel to a national park....

The OP was asking about canoe tripping, nor canoeing. I am well aware
that there are lots of lakes and rivers in southern Ontario. Most of them
run through private property, so there are few places to camp. Algonquin
Park is about the closest place where there are wilderness canoe routes
with established camp sites.

FYI - There's a WHOLE world outside of Southern Ontario...read the freakin'
subject line TORONTO to HALIFAX...roughly 1600 kms....

Then perhaps you can tell us some place somewhere along a reasonable route that
offers canoe tripping, as opposed to paddling around in a canoe.
