GSM is 900 and 1800 MHz and 1900 MHz. In Canada you have the 1900
handsets, so you need either a tri-band handset (I remember some
motorolas and nokias) or take your gsm SIM card with you and stick it
into a HK dual band ("normal") handset.

Dual band (eg. Ericsson T28W, T29 work fine in China, Taiwan, Canada,
Hong Kong. Even out near the Tibetan border in SW China, coverage is
not a problem.
