Default Dinner sittings

Anytime dining would be great, except Dawn Princess doesn't offer it
on this cruise

Just as a suggestion, you might want to consider 'Anytime' dining (or
equitant), for this would give you far more flexibility in your schedule.
That way you can pick your own dining times... late or early or anytime
in-between. And you can even vary that time anytime you want.
