Default travel with (young) children

hi there,

I'm planning a trip to south-east asia with my two children. One is 5
years old, the onther one is 3 and a half.

We wish to travel the easy way, without any hassle, but also without
great luxury trough Vietnam, Cambodja and Laos. For four months. We
travel with local transport, pay in local currency, eat local stuff,
sleep in local hotels.

Has anyone experience with such travel or good advice for us?
