what sort of lunacy has such people actually choosing war over
compromise and ultimately a peace which will benefit them?

Abba Eban, arguably one of Israel’s greatest statesmen, is on record
of offering peaceable discussion and compromise before the first war
that the Arabs started and lost, which attempted to wipe Israel out.

And yet the Arabs did this again and again, each time getting more and
more weakened in the process.
