We're considering a Rhine cruise on one of these boats through Tauck Tours.
Tauck does not offer a day trip to Salzburg. Does anyone know of the ships
themselves offer such a trip? Thanks

I should be very surprised if they did; AFAIK Salzburg is a long way from
any waterway navigable by passenger boats...

You need with a fast train from the Rhine to Salzburg at least 5 hours
(Mannheim). By bus even longer.
Nobody will offer a day trip over this distance.
