We stayed in paradores in Spain and loved it. Is there some sort of
comperable lodging in Italy?

There are in Portugal (Pousadas de Portugal), but AFAIK not in Italy.
You won't have problem to find the best luxury hotels in Italy, though.

On the other hand, I don't like so much the idea to see ancient castles
or fortress converted to hotels, therefore I'm quite happy that the
Paradores method has not been adopted in Italy as well.
