Default Things to do in Hong Kong

I will be in Hong Kong over a weekend in early March and have a few
questions:

1. What are some nice places to see in the New Territories that I
could do as a 6 hour return trip from Central/Tsim Sha Tsui?

2. Is it possible to go up Lantau Peak if I start early and I am
flying out at approx 6:30PM on a Sunday?

In Shatin you could see the Ten Thousand Buddha's Temple which is located
right behind Shatin KCR station. It is not the most "orthodox" Chinese
Buddhist temple in the world but can be rather colourful. You might also -
but that is still in Kowloon - take the MTR to Wong Tai Sin and see the
temple there. It is a very interesting folk religious temple where people
bring their roasted pigs, chickens etc. for offerings. There is also a lot
of fortunetelling going on there. After that you can take the MTR one
station further and see the Po Lin Nunnery close to teh Diamond Hill MTR
station. This is a bran new structure that has opened just a few years ago.
It is a HUGE showpiece of a religious monument build in Tang style and of
wood that has been hidden in caves in the Mainland during the Big Step
Forward in order to save it from becoming fuel in the People's Melting
Ovens. Some of the Bonsais there are more than thousand years old and have
been flown in from China by helicopter. The nunnery which has cost several
billion HK$ to build is - I believe - open until about 6 in the evening.
Certainly worth a visit.

Buy a guide to Hong Kong now, read up on it, so that when you get there,
you'll already be familiar with the places and can move quicker. Lonely Planet
has a good guide.

We have been 3 times and each time we could not help getting caught up in
just wandering the streets. Visiting the various markets and places like
Kowloon park Also, the bird garden where all the Hong Kong folk take there
caged birds for their daily constitutional. This is where the bird market
is, also. All of this colour and mixing with the locals is what Hong Kong
is all about, taking in the sights, sounds, smells and flavours. All this
is FREE (unless you make some purchases in the markets of course). The
"Peak" is easily done in a morning (and well worth it).
