You might want to try the Observatory in Millers Point. Not cheap by any means, but by far the nicest hotel I've ever been in. Try the "wake up". It's central, not to expensive and very nice.

feel honour bound to mention Big www.bigonelizabeth.com since a friend of mine is involved there It's just up the road from Central, billed as 'budget boutique' and in essentially the same market as WakeUp. If you want to be closer to Bondi, I can recommend www.number71.com - very nice indeed. None of these have a pool, however.
