don’t bother, to my knowledge there are no trains for this route.
Trains from Bangkok stop at the boarder. Cambodia only has a short
train line from Phnom Penh, but it doesn’t go to Siem Reap (Angkor
Wat). No train from Phnom Penh to Saigon.

After a lot of reading on the possibility of doing the land
route, I decided against it.

I flew from Bangkok to Siem Reap return using Bangkok Air.
You can also choose an air route to include Phnom Penh.

The cheapest way when I booked was to use their "Discovery
Airpass" vouchers.

You have to buy vouchers for a minimum of three flights; it
was actually cheaper for me to do that and not use one than
to pay for the standard return flight.

Go by bus from Bangkok to Siem Reap in Cambodia.

Or take the train from Bangkok Hualampong Station to Aranyaprathet.
Take a pickup to the Cambodian border.
Cross the border to Poipet.
Go by bus to Siem Reap, stay here to visit Angkor (about 5 km North).

From Siem Reap you can take the bus direct to Phnom Penh. Or go to
Battambang. From Battambang there should be a train once a week to Phnom
Penh.
Go by bus from Phnom Penh to Ho Chi Minh.
