Default Sydney - in one day?

Your tour is great for "views from coach". I would suggest that you take the
planned tour of the Opera House, which is of interest to you. Spend the
remainder walking around the Rocks and the Botanical Gardens. Take a ferry
to Manly and back and have lunch there at a seafood restaurant. In the
evening, go to Darling Harbour for a nice meal with great views of the city,
etc. That should take care of most of your time between plane trips and you
will still have change from the cost of the coach trip!

Square when you get back from Manly, then take the monorail to get to
Darling Harbour. If you prefer Asian food, drop in at the Haymarket;
depending on which day it is you could also visit Paddy's Markret in the
same area.

A return ticket on the Manly Ferry has to be one of the best value
sightseeing tickets in the world (not THE best, because it's hard to
beat the free tickey on the Staten Island Ferry:-) Take the "normal"
ferry, not the Jet thing, and make sure you get a good spot on the
appropriate deck for photos.

When you get off at Manly, it's only a few hundred metres to walk from
the ferry to the beach.

I'll third that.

I would skip Chinatown - its got great cheap food, but you won't be doing
enough eating in one day to care about the cost. Paddy's market is
disgusting.

There's a very nice - though not cheap - restaurant on the beach at Fairy
Bower - a delightful 15 minute walk along the water from the Manly surf
beach. What you save from the tour can pay for a meal there several times
over.

Thanks for the tip. I just got back from lunch there! The restaurant
is le kiosk (http://www.lekiosk.com.au/) and the food was excellent.
The presentation was outstanding, and it looked as good as it tasted
(had the snapper special). The winter weather cooperated: we sat
outside in the sun, with a pleasant cooling breeze.
