For on-time performance, it appear to be United Airlines.

The table doesn't include MDW, where WN flies from.
OP didn't say he had to fly out of ORD

That's true. So, according to flight stats, MDW-LAS has WN at 61% on-time
while for ORD-LAS, United's on-time over the time period examined is 53%.

I've learned to never go by the stats. My particular flight could be good
or it could become a complete disaster. Especially in Chicago with the
unpredictable weather.

It would help if you told us what you mean by reliable. Most likely
to land on time? Most likely still to be in business when you want to
fly? Most likely to find you another flight if yours is cancelled?
Least likely to be gratuitously hostile when you arrive at the
airport?

The airlines that fly non-stop between Chicago and Las Vegas are
American, Southwest, United, and US Airways. (Oh, and Allegiant Air
has one daily flight from Rockford.) Of those I would rate Southwest
and American somewhat better than United and US Airways in the
gratuitous hostility department, but the differences are not large.

Southwest has a reputation for being cheap, but on many dates I
see considerably lower fares on United and US Airways.
