I will visit Morocco for a month during December and January on my own.
I wish to do a 2-3 days mountain hiking and 2-3 days desert safari. Are
there any recommendations where I can do these? I have little hiking
experience or equipment so I am looking for routes that are easy to
manage. Or are there organized tours that I can join? Many thanks.

I jumped on a boat and went to Morocco (just me and my backpack)back in
1991. I stayed a few days at a campsite-like area in Al Hoceima near
the Rif mountains... good hiking areas there. The locals seemed quite
friendly too.

Get as far from Tangiers as possible.

Marrakesh is great but you'll get hassled a lot (actually Morocco in general
is bad for hassle)!

The best place we stayed at, great for hiking was cascades d'Ouzoud (Atlas
mountains).

Right, it is quite a lot of hassle in Tangiers. Anyway, I have been in
places near there like Larache and I can assure you there is not
absolutely no problem at all.

The bad thing is that in the touristic places like Marrakech, Fes and
Meknes there are "guides" who want to take your money, but Moroccoan
people, 99% is fantastic and helpful people.

The Atlas are fantastic, also the Sahara.

I took the bus down to Risani from Fez. From Risani you can organize a camel
trek and also stay at a pension at the edge of the Sahara. Great experience!
