Cape Town neighborhoods

We are staying in Cape Town in late October and we're having problems
deciding what area to stay in. We are in our early 30s, but are not
drawn to the busy areas of town. We considered Camps Bay, but are
thinking about disregarding it after finding out it can be quite busy.
Are the Southern Suburbs a nice area to stay in? Too remote?

What do you plan to do while you are there?
Will you have a car, or depend on tour operators
to provide your visits to the various places you
might want to see?

We will have a car rental. We're not using any tour operators at all.
We have considered Constantia for our base in the Cape area, but are
unsure if it's too similar to Franschoek.

We are planning on spending 4 nights in the Cape Town area (seeing
Table Rock, Boulders Beach, etc), 3 nights in Hermanus (cage diving), 2
in Franschoek (wineries), 2 days near Hazyview/White River area (casual
sightseeing of Kruger), and then 5 in Londolozi in Sabi Sands.

Any advice on areas/ places to stay at would be great. We like the
smaller hotels or guest houses
