There's a direct flight from Bangkok to Siem Reap, so you could visit Angkor
Wat. You'd need to check the Cambodian visa situation, though. If just seven days in Thailand, start in Bangkok for 4 days, with maybe a day trip to Ayutthaya, and another to Kanchanaburi, then fly to Chiang Mai for 3 days, then back by plan to Bangkok and out of the country. To be honest, 7 days really isn't enough to see much of the country, particularly if you're not young, mobile and energetic.
